Third times a charm!




Ok, this time everything felt right!
I feverishly worked to cook my beans to exactly the right texture, made sure to sterilize everything!

Then waited for the next 24 agonizing hours!


Then....


Wait...



Voila!!!!!!!

success!!!!!


Oh finally I could enjoy the fruits or beans of my labor!!!


Stay tuned for my attempt to make the "gentleman" of the natto world... Black natto!!!

I am very happy to read that I am not the only one who's had little to no succes in making my own natto.
I finished a batch yesterday, and two of my containers (about one third of the batch) were definitely NOT good. They smelled )one even tasted) pretty much of ammonia and was also bitter, plus there was almost no stickiness.

I think I work too slow and it gets contaminated. I'll HAVE to try again! I also want to try to make kuronatto; I had that at a Japanese family who also make it themselves, and it's absolutely wonderful!

Can't wait to give it another try!
